Hi there! I wanted to share with you the yummy foods I ate today...

For breakfast, I had a bowl of high fiber cereal and added raisins.

For my 1st snack, I had blueberry-flavored Greek yogurt and a handful of almonds. For lunch, I ate a Caesar salad wrap. Here's how I made it...

I took a fat-free tortilla...

...added some baby spinach.

Then I cut up the leftover pesto chicken I had from last week and put it over the spinach.

Then I drizzled on some Caesar dressing and added some parmesan cheese. Then I rolled it, cut it and...

Voila! A tasty Caesar salad wrap!

For my 2nd snack, I had an organic cereal bar and some pudding to satisfy my sweet tooth.

I had to stock up on some household stuff at Sam's Club, so I picked up one of their yummy rotisserie chickens while I was there. They have the best rotisserie chicken I've ever had! What did I have for dinner with the rotisserie chicken?

Brown rice & lentils, along with a tomato and lettuce salad. Generally, I don't eat the skin of chicken. Yes...the skin is very caloric, but that's not the reason I don't generally eat it. I just don't want it most of the time. But I have to admit that I eat a little bit of the skin when I get a rotisserie chicken from Sam's...it's got so much flavor!
So that was my day of eating. All-in-all, it was very healthy and tasty. I try to do a couple of things to get my metabolism going...I try to eat at least 30 to 45 minutes after I get up in the morning AND I try to eat several small meals a day. I aim for eating 6 meals a day, but it's difficult for me to get that many in. I normally make it to 4 or 5 meals. I also try to drink lots of water throughout the day and get in a good amount of fiber. And because I'm severely anemic, I try my best to fit in several energy-promoting foods. Today, it was spinach, lentils and almonds. I'm so proud of myself for walking on the treadmill for an hour. I normally only do 30 minutes, so an hour is a big deal for me! Trust me, I don't always stick to this healthy lifestyle. But one thing's for sure, I get right back on the wagon if I fall off. I'm not hard on myself and I don't give up. I try to keep a positive attitude because I know that I'm not perfect. And I've noticed that the not giving up has really helped me form healthier habits. So the more healthy I eat, the more of a habit it becomes. I really look forward to the day that I'm at my healthiest weight and that I'm physically fit enough to run a marathon...gasp!
