My Omelettes Two Ways!

I had omelettes twice today...1st for breakfast, then for dinner. But I cooked them differently each time.

For breakfast, I sauteed green, red, yellow & orange peppers in the pan with mushrooms and onions. Then I poured some egg whites in. Once the egg whites set, I seasoned them with salt & pepper and added some shredded cheese.

For dinner, I wanted something more hearty. I decided to make another omelette, but with whole eggs. So I sauteed the same veggies as above in the pan, but added grape tomatoes this time. I also added some slices of the pesto marinated chicken I baked last week. Then I beat 3 eggs and added them to the pan. Once the eggs set, I seasoned them with salt & pepper and added some shredded cheese.

And there you have it, omelettes two ways! Both ways were very yummy and healthy. The way I made it for breakfast was healthier, though, because I made it with egg whites and only used veggies. Btw, I did have lunch today...leftovers from the bacon-wrapped tilapia dinner yesterday. I also had a banana, dried pineapple bits and pudding. All-in-all, it was a good day of eating.

Years ago, I tried to sing Mariah Carey’s song “Vanishing” at a talent contest and got booed! I told Mariah that story when she came to Z100 and she laughed!

Who are your personal heroes?
My family and Oprah!

What is your most annoying habit?
I think I’m right all the time!

What is your favorite Z100 moment?
When I came to audition for the job on June 7, 2001. I’d wanted to live in New York since I was a kid and it was so overwhelming to be here…realizing my dream at Z100!

Tell us your dirty little secret.
I hate cleaning house…I need a maid when I get rich!

I love singing, writing songs, and just being around music.
